I would also really like this. In my use I prefer a scratch sheet at top (above my regularly used items) but do not want to (for example) make a new scratch sheet every time on open (i.e. start w/ blank sheet). I'd prefer to just pin a junk sheet to the top for quick calculations. Thanks!

Add the feature as Apple did to notes. Swiping on the sheet name will display an option to pin.
